Anyone cooking turkey this Thanksgiving?

So I'm just doing a traditional roasted turkey as I do most years. But I need some flavor this year. Thinking a rosemary, garlic, butter rub. Anyone do this before or have a recipe? I know it's pretty simple, but want to use a tried and tested recipe. I'm also doing a cornbread stuffing.

The best (non-sous vide) turkey recipes that I’ve ever used are Michael Ruhlman’s, which are free on his website/blog, if you do a Google search.
 
I'm doing Cornish game hens, for something different. Everybody gets their own bird!

Going to use a Mediterranean style rub.
 
Well most of it is pretty good. You can get all of the Thanskgiving side dishes in the refrigerated section of Trader Joe's. But I'm taking from your statement that without people around you're just ditching Thanksgiving food.

Ok so now my San Francisco girl "friend" tells me that she's spatchcocking her turkey. I didn't even know what that was until I googled it just now. Doesn't hold stuffing so no.

I had planned on going to my brother's place as usual.... called him last night and he said everyone was sick. I need that shit like a hole in the head. So I went to the market and bought half a fresh bird. It will go onto the smoker after work tomorrow for a fast blast of apple & maple smoke. I think an hour should be plenty. Then I'll finish it off in the oven on Thursday. Gonna be hibernating weather here in the Commonwealth.

I have spatchcocked the bird before; we were smoking it that year. It turned out great, but it just didn't taste like Thanksgiving--wrong flavor palate. I will be roasting this year with nothing but butter, salt, pepper, sage, and poultry seasoning.
 
I <3 spatchcocking. stuffing in the bird is kinda dumb, IMO, but I get that some people like it for tradition's sake
We always did half the stuffing in the bird and half in a Corningware container--then combined before serving. We abandoned that a few years back.

Yes I am traditionally dumb! You know, you grow up with stuffing in the bird and gotta have it that way.

I love corningware! and love stuffing! just cook it separately!

the food safety thing is what's generally given as a reason not to do it, but food safety food smafety, the stuffing fucks up the cooking of the bird and the bird fucks up the cooking of stuffing. deliciousness is reason enough to not do it!

(I think we used to do the half-and-half thing as well)

I will pick up a roasted turkey breast from the supermarket tomorrow.
Heat it up on TG.
Make a few sides. Done.
