Resident Ragamuffin
Very easy and very good. Try it this holiday season some time. I double the recipe but here is the basic one...
Ingredients
One bag fresh cranberries (appr 12 oz)
1/2 cup honey
2 TBL firmly packed brown sugar
Two 3" cinnamon sticks
6 whole cloves
1/4 teaspoon nutmeg - freshly grated if possible
3/4 cup water
1. Rinse the cranberries and pick out the bad ones.
2. In a saucepan combine the cranberries, the honey, the brown sugar, the cinnamon sticks, the cloves, the nutmeg, and the water. Slowly bring the mixture to a boil (watch the pot because it will tend to overflow) then reduce to a simmer.
3. Cover the pot and simmer for 5 to ten minutes, stirring occasionally, until the cranberries have burst and the mixture has thickened.
4. Move the sauce off the heat and put into a bowl to cool. this can be made ahead of time. According to Mrs D it is always better the second day. I leave the cinnamon sticks and clove in the mixture until it is served.
Feel free to experiment with orange peel, whiskey (instead of part of the water), etc.
