I watched this a while back and quickly realized that the orchestra was probably already primed with a song that they knew they were going to play....
... he just broke down the elements of that particular song (Amadeus style), so some of them just followed his direction for their individual elements, but the others started realizing "Oh... he's having us rehears this segment of the song".
I've seen some hilarious memes online of what it must be like, and how exhausting it can be, living with someone like him who hears perfect pitch and rhythm all the time.... hearing rhythms in all the random noises around them, tapping on cups or bowls and singing what key they're in.....
