His rig is simple enough, but he's fucking Peter Townsend. All he needs are three chords and you know it's him.

J. Mascis.

His approach to tone and guitar playing is pretty distinct.

I'll also vote for Al Di Meola.
 
I think theres quite a lot, as shown by this thread. One that springs to my mind is Brian May. His 'Red Special" stands out a mile.
 
I'll pick Ralph Towner, particularly his work with a 12-string, which this isn't, but anyway...

I'd like to think i could recognize Billy Gibbons playing if i heard it. I'm not sure if it's true, but i dont think anyone quite sounds like he does.

I always thought this too, but a couple of years ago I saw a ZZ Top cover band called "Sharp Dressed Man" (Men?). The guitar player absolutely nailed Gibbons. In fact, he could play the old ZZ Top stuff better than Gibbons himself these days.
